To craft a pineapple bowl, slice pineapple in half lengthwise. Scoop out the insides to create a bowl. Drain excess pineapple juice and place the bowl in freezer until ready to serve.
Chop the scooped out pineapple into quarter-inch cubes to add to the fried rice. You should have about 2 cups of chopped pineapple.
In a large nonstick pot, heat vegetable oil and minced garlic.
Whisk eggs together and add into fried garlic, stirring constantly to create scrambled eggs.
Add in 2 cups of chopped pineapple, Spam, peas and carrots, and onions. Saute for 5 minutes until Spam becomes crispy.
Add in cooked jasmine rice, soy sauce, and black pepper. Stir until soy sauce evenly coats all of the rice, about 5 minutes.
Serve hot in a pineapple bowl.
