Hawaiian Fried Rice

Ingredients

  • 1 pineapple
  • 8 cups cooked jasmine rice
  • 4 eggs whisked
  • 1 can Spam diced
  • 1 large white onion diced
  • 1 can mixed peas and carrots
  • 1 cup soy sauce
  • 2 tbsp ground black pepper
  • 2 tbsp vegetable oil
  • 1 tbsp minced garlic

Instructions

  • To craft a pineapple bowl, slice pineapple in half lengthwise. Scoop out the insides to create a bowl. Drain excess pineapple juice and place the bowl in freezer until ready to serve.
  • Chop the scooped out pineapple into quarter-inch cubes to add to the fried rice. You should have about 2 cups of chopped pineapple.
  • In a large nonstick pot, heat vegetable oil and minced garlic.
  • Whisk eggs together and add into fried garlic, stirring constantly to create scrambled eggs.
  • Add in 2 cups of chopped pineapple, Spam, peas and carrots, and onions. Saute for 5 minutes until Spam becomes crispy.
  • Add in cooked jasmine rice, soy sauce, and black pepper. Stir until soy sauce evenly coats all of the rice, about 5 minutes.
  • Serve hot in a pineapple bowl.
