Honey Ginger Glazed Salmon Salad

Ingredients

For the glaze/dressing

  • 1/2 cup soy sauce
  • 1/2 cup rice wine vinegar
  • 2 tbsp honey
  • 1 tbsp minced ginger
  • 1 clove garlic minced

For the salad

  • 1 salmon fillet
  • 2 cups lettuce any salad mix
  • 1/2 cup snow peas
  • 2 radishes
  • 2 tsp sesame seeds for garnish

Instructions

  • Whisk together soy sauce, rice wine vinegar, honey, ginger and garlic until thick.
  • In a saute pan, heat up 3 tbsp of honey ginger dressing. Saute salmon fillet in heated dressing for 2-3 minutes on each side.
  • Slice radishes into thin slices, remove ends from snow peas and mix with lettuce.
  • Serve glazed salmon atop salad and garnish with remaining dressing and sesame seeds.
