Chili Lime Collard Greens

Ingredients

  • 1 head collard greens about 1-2 lbs
  • 6 cups chicken beef, or vegetable broth
  • 3 tbsp sesame oil
  • 3 garlic cloves
  • 3 Thai chili peppers
  • 1 lime
  • additional salt and pepper to taste
  • sesame seeds toasted, for garnish

Instructions

  • In a large pot, bring broth, sesame oil, garlic, chili peppers and the juice of 1 lime to a boil.
  • While broth is simmering, stack washed collard greens and chop into 1 inch thick pieces. Optional: Remove stem from entire leaf prior to chopping.
  • Add chopped collard greens to boiling seasoned broth and simmer for about an hour.
  • Garnish with toasted sesame seeds.

Notes

Feel free to use any kind of broth or stock as your liquid base. Add salt and pepper to taste as necessary.
